FALCONE is an energetic, colourful, and flamboyant ristorante Napoletano. It honours Napoli’s frenetic energy and animated streets, where life is embraced in all of its colours - the hights and the lows, the vices and the virtues; the romance and the grit.
If a picture says 1,000 words, then this film is a declaration to a city that we have fallen in love with that has so greatly influenced our work.
Last summer, we went to Napoli hoping to find inspiration within the city’s layers and its people. Most importantly, we went to eat really good pizza, and to experience the all-at-once purity, simplicity, artistry and dirtyness of what this thing is supposed to taste like.
The driving force behind this trip were Head Chef Josh Stumbaugh of Associazione Chianti and Head Chef and proud Neapolitan Roberta De Sario of Motorino. With the pair leading two of our italian stories, a camaraderie and friendship blossomed naturally. Intrigued by Roberta’s passion for all things Napoletana, Josh encouraged that they travel to the brith of pizza.
